Hi everybody! ACT Inspiration has been going very well, in fact, it just seems like no big deal to eat raw all day long till dinner now. It is really easy to do, actually! Knowing that I can have a hot bowl of soup, or a big veggie stir-fry at the end of the day makes it so easy to focus on raw foods throughout the day. Not that it is very hard! After feeling this amazing surge of energy I would really like to eat like this from now on. I’m sure it has a lot to do with cutting out gluten and sugar, but I’m positive the massive amounts of veggies I’m feasting on have something to do with it too!
I can’t say it enough: I love starting the day with a green juice! It gives you such a huge serving of delicious vitamins right at the start of your day, and it always makes me so joyful to think about nourishing and replenishing my body. And look how happy it makes Cody!
Salads, salads, salads! You would think that after eating them almost every day for lunch for the past 3 weeks I would be bored of them but you would be so wrong! I crave salad all the time. I dream about the crunch of a nice, juicy bell pepper, the buttery taste of a ripe avocado and the earthy sweetness of bright red beautiful beets. And I really love my salad dressing: tahini, spicy mustard, olive oil. WOW! Great combination. The salad above had 2 types of lettuce, beets, carrots, broccoli (lightly steamed), chickpeas (cooked), red onion, sunflower seeds, radishes and cool, creamy avocados. Delicious!
Mmmm! This salad had lettuce, spinach, broccoli (lightly steamed), chickpeas (cooked), carrots, bell peppers, red onion and the most deliciously spicy marinated olives ever. (I buy them in the bulk section at Geant in Bahrain, they are black and green olives marinated in oil with garlic and basil.)
Here is an example of an especially fun cooked dinner we enjoyed this week. I sauted a bunch of vegetables, including spinach, bell peppers, onions and garlic, tossed it with a bit of coconut milk and super spicy green curry paste, and served it on a bed of cooked quinoa. I had to surround mine with some nice cool cucumbers to help my tongue survive the heat!
This was a quick and easy (and very pretty!) dessert. I combined medjool dates with pine nuts and a bit of agave nectar in my food processor for just a few seconds until it had a thick, moist, crust like consistency. I took handfuls of the crust and pressed them down into the bottoms and up the sides of a muffin pan. Then I popped the pan in the freezer for an hour or so, until I could pop the crusts out and they stood up nice and firm on their own (but they were not frozen solid, they were definitely edible!). Then I spooned some fresh blueberries and raspberries into the center (you could toss them with agave if you wanted this to be really sweet) and then I drizzled melted dark chocolate over everything. Everything has been going great this past week with ACT Inspiration. My energy is still sky high, I feel amazing! It is just the clearest indicator of what is really good for my body and I’m very happy to have had this wonderful experience. Sorry this post is a bit shorter than usual, but I’m busy cooking up a new idea and it is taking up a lot of my time. Yes, it has to do with delicious vegan food! I will tell you more soon. Wow! Those raw berry tarts are so cute, and the crusts sound amazing. I'll have to give that a try some raw day soon.

Yeah at school when I'm in the dining hall with my friends they always ask how I dont get sick of my twice a day salads (I usually just have one a day at home, but at school, there are less options), and I always say "but every single one is different!"

Girl on Raw – Geant in Bahrain has been known to have agave nectar from time to time so if you see it be sure to stock up! And don't look by the honey, they always have it hidden in a different place every time. One time I found it all by itself by the powdered milk.

I could eat a good salad every day too – I have some beets hanging around, and hadn't thought of using them in salad – good idea! The green curry and veggies on quinoa looks delicious too, along with that lovely berry dessert.

Those tartlettes are so tempting! You're definitely proving that when the food is simply fresh and in season, it doesn't need much dressing up to be beautiful and delicious.
