‘Beef’ & Veggie Stir-fry
This was delicious! I took two Amy’s frozen vegan burgers and cooked them in a frying pan (with a chopped yellow onion and garlic), breaking them up with a wooden spoon until they were in crumbly, crispy delicious chunks. I then added some leftover steamed broccoli and a bit of swiss chard, added a splash of soy sauce and a dash of red pepper flakes and served it on a bed of wholesome quinoa. And a fun crunch was included by adding a handful of sunflower seeds. This was so quick and easy and did I mention the YUM!?!?

Yum. I love simple suppers. We have something similar in our home. I call it the "Pantry Challenge". On Sat or Sun, I usually use whatever is leftover in the fridge and what is in the pantry to make a dish. It is fun.
I love using mashed up veggie burger in recipes. I think the larger chunks are more appealing than when you buy it already ground up.
oh wow, that sounds super simple and delicious! i never thought to use a veggie burger in stir-fry. an asian market near me has veggie beef, maybe i will use that in something similar.
I love anything simple, but when it's as delicious as that looks, it's even better! YUM!
I'm a sucker for anything with onions that look even semi-caramelized, so I'm drooling just looking at that picture. Undoubtedly delicious!
