
Breakfast
A delicious smoothie with a side of sweet Polly! Cody whips up the best smoothies, for some reason I just can’t compete! He uses frozen strawberries, frozen blueberries, bananas, soy milk or almond milk, and a big dollop of peanut butter. Scrumptious, it’s like dessert for breakfast!

Lunch
I never tire of snacky meals! They last for ever, and I just love lingering over a meal, taking bite after bite of deliciousness! I had a bowl of guacamole and a bowl of white bean herb dip. I’m not really sure what to call it, so if you can think of a catchier name I am open to suggestions! The addition of a piece of toast blended up with the beans creates a silky, rich texture for this delicately flavored dip.


White Bean Herb Dip
- 1 piece of toast
- 1 can of white beans, drained and rinsed
- 1 clove garlic
- 1/4 cup fresh basil
- 3 Tbsp lemon juice
- 1 Tbsp apple cider vinegar
- 1/2 tsp salt
- 4 Tbsp water
- 3 Tbsp olive oil
- 1/2 tsp dried tarragon
- Blend the piece of toast to crumbs in the food processor, then add the rest of the ingredients and combine till creamy.

There should be no recipe for guacomole! Just mash up a ripe avocado, add salt, pepper, hot sauce, and a squeeze of lime juice. A pinch of cumin is delicious, too!


Dinner
This was a quick and easy winner! A big bowl of couscous topped with a crumbled up Amy’s burger and a crispy, salty, chewy piece of paratha bread to scoop it all up. One of the best things about living here is the access to great Indian food. These parathas are super cheap and come in a big frozen stack. All I have to do is pull one out of the package and cook it up in a frying pan. Delicious and perfect every time!

Snack foods are so good. I love white bean dip and yours looks yum.
My husband's specialty is guacomole, the family lets him make it if we are having a get together. This is what he uses, but no measurements: avocado, red onion, tomato, cilantro, fresh jalepeno, pickled jalepeno, smidgen of fresh garlic, lime juice, s&p to taste.
"There should be no recipe for guacomole!"–I agree. When the ingredients are really good, you dont need any recipes or anything catchy, just a fork and a good mashing!
Breadcrumb & White Bean Hummus. Or any version of interplay between those words, White Bean Breadcrumb Hummus, etc etc.

goodness i wish your everyday nums were my everyday nums! i love indian food and could probably have it everyday (if only my digestion system would let me) that paratha bread looks amazing…what is with me and carbs? LOL
