I’ve been enjoying some great eats around here this past week and thought I’d share some with you!
I LOVE WRAPS. Seriously, I have them almost every day for lunch, I just can’t get enough of them. I spread them with a thick layer of vegan mayo and chopped basil in oil (remember the goodies we picked up last week?), and then I stuff them with avocados, baby spinach, bell peppers, carrots, sprouts, pumpkin seeds, bacos, and pickles. Perfection.
That salad you see was just some rough chopped raw veggies tossed in a mixture of olive oil, fresh basil, and balsamic vinegar. Such a great combination!
I had this as an appetizer before dinner one night, when I knew I wouldn’t be able to wait for dessert to get something sweet. It is oatmeal with a dollop of peanut butter stirred in, and dark chocolate on top. It was delicious. I’m not usually the biggest fan of oatmeal and only have it very rarely, but this was just what I needed.
Speaking of dessert, this is what it has been for the past week. I’m on such a cereal kick, I love it. But not for breakfast, only for dessert. Breakfast is always a green juice or green smoothie, that is all I crave in the morning. But almost every evening after dinner, I just love to sit down to a bowl of crunchy, slightly sweet cereal in a puddle of icy cold soy milk. Yum!
Ani Phyo’s Sun Burgers, served with a side of edamame and cherry tomatoes. These burgers are phenomenal! I was amazed at how much I loved them. They are made with a combination of seeds and veggies and then dehydrated (I used my oven) for several hours until they are crispy and delicious. The flavor really reminds me of meatloaf, and that is definitely a good thing. I topped mine with a quick sauce I made by combining avocados and sun dried tomatoes. Doesn’t look too pretty, but I promise you it tasted like heaven.
I snacked on a lot of salads this week, topped with this delicious raw peanut sauce recipe from Choosing Raw. It is so simple and brightly flavored, I think I could eat it like soup. But it was yummy on the salad, too!
You can’t get much better than fresh figs and fresh blackberries for a snack, can you? I adore figs, they are subtly sweet and so incredibly soft and fragrant, eating them is an out of this world experience. It really is true that the best things in life are the little pleasures.
Well, I would love to stay and chat all day but I’ve got a bunch of things I’ve got to get done this afternoon, not the least of which is a big pile of laundry. Luckily my laundry helper is ready and waiting.

fresh figs do make for the yummiest snack – i love me some blackberries, too. mmmm! ani’s sunburgers look awesome and i’m totally going to have to make Gena’s peanut sauce, too. nice! oatmeal + pb + chocolate = heaven! i too love cereal for dessert sometimes – it’s fun & yummy to switch it up a bit. i was so happyfaced to hear your dad is really enjoying all the vegan eatz, Tasha. green smoothies, raw-ish pizza, those amazing enchiladas, lasagna, raw chocolate desserts – everything is wonderful sounding and looking! i’m so glad he’s feeling great, too! wahooooooo!

A good wrap is this: wrap + vegs + hummus + avocado + seeds/nuts, etc…i am not vegan but that is yum…other times I might add 2 whole eggs or whatever…wraps are good!
What kind of cereal is that? Looks good.

I take it your cat isn’t afraid of the dryer when it is on? We’ve taken our cat on “trips” to the laundry room just to let her get out of the apartment, and the time we went when the dryer was going she freaked out! And then she was extra lovey for a few hours so we think she thought we were going to feed her to the dryer gods

Hahaha! I’ve never had a cat in my life before Twilah, but it is so true – she really does crawl into anything. If we open one of the closets, even just for a second, she tries to dart in. Cupboards, boxes, bags, same thing. Cats are so odd…

Hey my dear…the sunburgers from Ani, you have just inspired me to hopefully crack open that section of her book and get to work! NICE job on those and I dont normally go for things like that, but you’ve tempted me. And the sauce too.
But I am a fan of peanut sauce. Have never made Gena’s recipe, just use my own concoctions..but yeah, anything w/ peanut sauce kinda rocks

I really liked this recipe. It surprised me because I dislike most veggie burger available in the store. I used regular beans because I didn’t have black beans and it was still delicious.
